与其他动物不同，鲨鱼没有骨骼却拥有占体重6~8%的软骨。与软骨占体重1%的大部分哺乳类相比，鲨鱼拥有相当多的软骨。鲨鱼软骨中含有丰富的钙、各种矿物质以及软骨素、蛋白质等黏蛋白粘多糖。
软骨素是什么？
软骨素是一种黏蛋白粘多糖，是包括人类在内的所有哺乳类关节、皮肤、角膜、肌腱中软骨的主要成分。在人体内与蛋白质相结合的软骨素会随着年龄的增长逐渐减少。软骨素均匀分布在人体之中，可让人体维持多样的生理功能。
